Crustless Vegetarian Egg Quiche

Ingredients
- 1 lb cottage cheese, lowfatNutrition
- 12 large eggsNutrition
- 1/2 tsp pepperNutrition
- 1 dash saltNutrition
- 1 cup strips or slices carrotsNutrition
- 1 1/2 cups cauliflowerNutrition
- 1 cup chopped or sliced tomatoesNutrition
- 1 1/2 cups flowerets broccoliNutrition
- 2 cups shredded monterey jack cheese, low fatNutrition
Directions
- 1Sauté vegetables in a non-stick skillet until lightly browned.
- 2While vegetables are cooking up, mix eggs, cottage cheese, monterey jack cheese, salt, and pepper in a large mixing bowl. Set aside.
- 3When the vegetables are done, put them into a greased glass casserole dish.
- 4Pour egg mixture on top, evenly spread across the top of the vegetables.
- 5Bake at 400°F (200°C) for 45 to 60 minutes, until eggs are set and the top is lightly browned.
