Chicken with Sun Dried Tomato and Artichoke Sauce

Directions
- 1Spray a non-stick pan with cooking spray.
- 2Add salt and pepper to both sides of chicken. Sear chicken on both sides and turn down heat.
- 3Add butter then the finely chopped shallots, garlic, and sun dried tomatoes (can have a coarser chop).
- 4Cook for a few minutes until lightly brown (be careful not to burn). Deglaze pan with the wine.
- 5Add chicken broth and heavy cream.
- 6Simmer for a few minutes. Sauce will thicken slightly. Serve with veggies, over pasta, or with rice.
