Cauliflower Au Gratin Soup

Directions

  1. 1In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
  2. 2Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
  3. 3Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
  4. 4Stir until cheese is melted.
  5. 5Drain cauliflower and add to soup.
  6. 6Pepper to taste.
  7. 7While not thick like "real" cheese soup it's great for a cold Winter day!
