Cauliflower Au Gratin Soup
A favorite dish made into a great tasting soup.

Directions
- 1In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
- 2Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
- 3Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
- 4Stir until cheese is melted.
- 5Drain cauliflower and add to soup.
- 6Pepper to taste.
- 7While not thick like "real" cheese soup it's great for a cold Winter day!
