Spinach Orzo with Pinenuts

Ingredients

Directions

  1. 1Cook pasta according to directions, drain, and place in medium serving bowl.
  2. 2In large skillet, add oil and onion. Sauté until onions almost clear.
  3. 3Add minced garlic and pine nuts. Sauté for about 3 more minutes.
  4. 4Add salt and pepper to taste.
  5. 5Add fresh spinach and diced tomato and cook until spinach is wilted.
  6. 6Pour spinach over pasta in bowl. Mix and salt and pepper to taste.
  7. 7Serve immediately or refrigerate and serve as a cold salad.
