Creamy Pesto Salmon

Directions
- 1Place each fish fillet on squares of foil and divide the oil and spring onions between them. Squeeze a little lemon juice over each fillet.
- 2Fold the foil over the fish securely and bake in a pre-heated oven 375° F (200° C) for 15-20 minutes or until cooked through.
- 3Gently heat together the crème fraiche, pesto and wine and pour over the fish.
- 4Serve with the cooked new potatoes and your choice of mixed vegetables.
