Ingredients
- 1 tbsp margarineNutrition
- 2 oz queso cheeseNutrition
- 10 oz kielbasa, choppedNutrition
- 2 small tomatoes, choppedNutrition
- 1 tsp crumbled bay leafNutrition
- 44 oz black beansNutrition
- 1 1/2 tbsps cuminNutrition
- 5 tsps oregano leavesNutrition
- 4 tsps garlic, choppedNutrition
- 1 medium onion, choppedNutrition
- 2 tbsps green onion, choppedNutrition
- 1 medium green pepper, choppedNutrition
- 2 cups waterNutrition
Directions
- 1Puree 15 oz of black beans with one tomato, queso cheese, bay leaf and 1/2 cup of water. Set aside.
- 2In a pot, melt margarine adding in onion, green peppers, garlic and one tomato.
- 3After the onions have caramelized and green peppers have started to tender, add in kielbasa, oregano, and cumin.
- 4After kielbasa is cooked, stir in pureed beans and green onion.
- 5Bring mixture to a simmer and add remaining black beans and water.
