Smoked Mozzarella, Bean and Corn Salad

Ingredients
- 2 oz smoked mozzarellaNutrition
- 1/2 tsp olive oilNutrition
- juice of half a limeNutrition
- 1/4 cup cilantroNutrition
- 1/3 medium bell pepper, choppedNutrition
- 1/2 cup red onion. choppedNutrition
- 1 3/4 cups black beansNutrition
- 2 medium ears of corn, kernels onlyNutrition
- 1 tsp cuminNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1/2 whole tomato, choppedNutrition
Directions
- 1In a large bowl combine lime juice, olive oil, beans, cumin, and salt and pepper to taste. Set aside.
- 2Heat a nonstick skillet over medium-high heat, add corn and bell pepper and pan-roast, stirring occasionally until lightly browned, about 4 minutes. Remove from heat and let cool.
- 3Stir corn, peppers and remaining ingredients into black bean mixture and toss together.
- 4Chill until ready to serve. Divide evenly into four salad bowls.
