  1. 1Pre- heat broiler and adjust the rack so it's 6" away from heat.
  2. 2Fill a medium pot with water and add a generous amount of salt, bring to boil.
  3. 3Wash the zucchini and cut into strips about 3" long and 1/2" thick.
  4. 4Add zucchini to water and cook until barely tender (3-4 minutes).
  5. 5Drain zucchini and plunge into ice water to stop the cooking, then drain in a colander for about 2-3 minutes.
  6. 6Spray broiling pan with non-stick spray. Arrange zucchini on broiling pan in rows, close together, skin side down.
  7. 7Brush zucchini with melted butter and sprinkle parmesan cheese over the zucchini, try to get most of it covered.
  8. 8Place under broiler and cook until cheese is completely melted and well-browned. Takes about 15 minutes. Enjoy.
