Parmesan Crusted Zucchini

- 1Pre- heat broiler and adjust the rack so it's 6" away from heat.
- 2Fill a medium pot with water and add a generous amount of salt, bring to boil.
- 3Wash the zucchini and cut into strips about 3" long and 1/2" thick.
- 4Add zucchini to water and cook until barely tender (3-4 minutes).
- 5Drain zucchini and plunge into ice water to stop the cooking, then drain in a colander for about 2-3 minutes.
- 6Spray broiling pan with non-stick spray. Arrange zucchini on broiling pan in rows, close together, skin side down.
- 7Brush zucchini with melted butter and sprinkle parmesan cheese over the zucchini, try to get most of it covered.
- 8Place under broiler and cook until cheese is completely melted and well-browned. Takes about 15 minutes. Enjoy.
