  1. 1In an ovenproof pyrex dish, steam the washed spinach, and other vegetables for about 5 minutes, just to soften a little.
  2. 2In a separate mixing bowl, beat the eggs with the cream and water. Add the grated cheese, salt and pepper, mix well.
  3. 3Mix the vegetables around in the pyrex dish. Leave to cool a little before pouring the liquids in.
  4. 4Sprinkle with a little cheese and bake for about 35 minutes in a 375 °F (190 °C).
  5. 5Serve with baby spinach or leafy greens. Delish!
