Cheese & Vegetable Frittata

Ingredients
- 1/3 cup green string beansNutrition
- 2 jumbo eggsNutrition
- 1 cup creamNutrition
- 3/4 cup shredded cheddar cheeseNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1/2 cup chopped carrotsNutrition
- 1 cup cauliflowerNutrition
- 1/4 cup chopped onionNutrition
- 1 cup spinachNutrition
- 1/4 cup waterNutrition
- 1 oz peppersNutrition
Directions
- 1In an ovenproof pyrex dish, steam the washed spinach, and other vegetables for about 5 minutes, just to soften a little.
- 2In a separate mixing bowl, beat the eggs with the cream and water. Add the grated cheese, salt and pepper, mix well.
- 3Mix the vegetables around in the pyrex dish. Leave to cool a little before pouring the liquids in.
- 4Sprinkle with a little cheese and bake for about 35 minutes in a 375 °F (190 °C).
- 5Serve with baby spinach or leafy greens. Delish!
