Sauteed Collard Greens with Turkey Bacon

Collard greens make for a delicious side dish.

  1. 1Slice greens, and wash thoroughly.
  2. 2Put greens in large bowl in water and microwave for 5-6 minutes.
  3. 3In the meantime, chop onion, bell pepper and turkey bacon. Sauté in olive oil until done.
  4. 4Remove greens from microwave oven and drain thoroughly. Pour greens into onion, bell pepper and turkey bacon mixture. Sauté for several minutes.
  5. 5Add water, bouillon cubes, and season with pepper flakes and sugar (as desired).
  6. 6Simmer on low for 20-30 minutes, until desired tenderness.
