Oatmeal Banana Cookies

With very little oil, these cookies are moist, delicious and very filling.

  1. 1Mash bananas, add other ingredients, stir well. (Chopped nuts can be added if desired).
  2. 2Drop about 3 tablespoons of mixture on cookie sheet treated with a light spray of cooking spray like Pam or covered with parchment paper.
  3. 3Flatten with back of spoon to make patty approximately 1/2" thick.
  4. 4Bake at 350 °F (175 °C) for about 13-16 minutes, until cookies start to brown.
  5. 5Carefully remove from pan with spatula and let cool on paper towel.
  6. 6After cool, you can wrap in cling film and freeze.
