Directions

  1. 1Peal, half, and core pear. Dice into 1" pieces.
  2. 2Place in microwave-proof bowl and sprinkle with sweetener (like Splenda) and cinnamon.
  3. 3Microwave on high for 2 minutes.
  4. 4Meanwhile, put yogurt, oatmeal, egg whites and dash of salt in blender.
  5. 5Add pears. Blend until smooth.
  6. 6Use in same way as pancake batter, cooking over medium heat on non-stick griddle.
  7. 7Note: makes 3 medium sized pancakes.
