- 1Preheat oven to 400°F.
- 2In a large mixing bowl, cover the bran flakes with milk. Using the back of a mixing spoon, mash cereal into the milk so that all cereal is in contact with the milk.
- 3Combine the flour with brown sugar, baking powder, cinnamon, and salt in a medium mixing bowl. Mix well.
- 4Add egg and oil and beat slightly. Add egg mixture to cereal mixture and stir until well combined.
- 5Add the dry mixture ingredients about ⅓ at a time, mix well, and repeat until all dry ingredients are fully incorporated.
- 6Divide the mixture into muffin tins and bake for 20 to 25 minutes or until done.
- 7Allow muffins to rest 2-3 minutes before removing from tins. Leaving muffins to cool in the pan will keep them warm longer and make them dry.
