This cheesy ale soup is hearty and delicious.

Directions

  1. 1Sauté onion in olive oil 3 minutes. Reduce to medium heat and add carrots and celery.
  2. 2Sauté 5-7 minutes further. Sprinkle in all purpose flour. Stir.
  3. 3Add broth, milk and beer (may use pale ale). Cook 5-7 minutes or until foam disappears and soup thickens.
  4. 4Stir in cheddar cheese and simmer 15-20 minutes.
  5. 5Serve with toasted bread and a garnish of more cheddar if desired.
