Mozzarella Meat Loaf
This low carb meat loaf is delicious.

Ingredients
- 4 oz part skim mozzarella cheese, shreddedNutrition
- 2 oz egg, slightly beatenNutrition
- 1 tsp garlic powderNutrition
- 2 tbsps parsleyNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1/2 small red onionNutrition
- 1/2 medium bell pepperNutrition
- 1/3 cup tomato sauceNutrition
- 8 oz pork rinds, crushedNutrition
- 1 1/2 lbs lean ground beefNutrition
Directions
- 1Heat oven to 350 °F (175 °C).
- 2Mix all ingredients and put in a 8x8" pan. (No need to make into a roll.)
- 3Bake for 1 hour uncovered then remove and let stand 10 minutes.
- 4Note: you can use sausage instead of beef and try and use salt free tomato sauce.
