- 1Boil cauliflower (broken in 1" flowerettes) in 2 1/2 cups of milk and salt in an oven safe skillet. Cover and simmer for 5 minutes.
- 2Combine breadcrumbs, 1/2 cups of cheese and olive oil and set aside.
- 3Whisk flour and remaining milk in a small bowl.
- 4Add flour mixture to cauliflower, stirring until thickened.
- 5Add remaining cheese, chives, mustard and peppers.
- 6Remove from heat and sprinkle breadcrumb mixture on top and broil in oven until browned.
- 7Note: based on a recipe from eatingwell.
