Directions

  1. 1Cut chicken into bite size pieces and cook then set aside keeping warm. boil water for pasta.
  2. 2Coat sauté pan with cooking spray and heat to medium-high.
  3. 3Add celery, leek and garlic and cook for 4-5 minutes until vegetables soften, adding a little broth to prevent burning.
  4. 4Add remaining broth and tomato paste and stir in tomatoes and seasoning and bring to a simmer.
  5. 5Meanwhile, cook pasta according to package directions, drain and transfer into bowl.
  6. 6Stir chicken into vegetable mix and heat.
  7. 7Serve over pasta and top with parmesan cheese.
