Chicken and Sweetcorn Soup

Ingredients
- 2 medium eggs, lightly beatenNutrition
- 1/2 tsp gingerNutrition
- 1 tsp sesame oilNutrition
- 6 cups chicken stockNutrition
- 2 medium spring onions, finely choppedNutrition
- 10.5 oz minced chickenNutrition
- 1 tbsp soy sauceNutrition
- 2 cups cornNutrition
- 2 tbsps cornflour, mixed with waterNutrition
- 21 oz creamed cornNutrition
Directions
- 1In a pot, heat sesame oil. Add chicken, ginger and spring onions. Stir until chicken is cooked through.
- 2In a large pot, heat chicken soup. Whilst simmering, add creamed corn, fresh corn, soy sauce, cornflour and wine. Stir until soup thickens slightly.
- 3Add chicken mixture to soup. Slowly pour beaten egg into soup, stirring continuously.
- 4Garnish with chopped spring onions and serve.
