  1. 1Grease and flour two 8x4"pans. Pre-heat oven to 325° F (165° C).
  2. 2Sift flour, salt, baking powder, soda and cinnamon together in a bowl.
  3. 3Beat eggs, apple sauce, vanilla and sugar together in a large bowl.
  4. 4Add sifted ingredients to the creamed mixture, and beat well.
  5. 5Stir in zucchini and carrot until well combined. Pour batter into prepared pans.
  6. 6Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
  7. 7Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
