- 1Let milk warm to room temperature.
- 2Heat oil on medium heat in a large pot. Sauté onion, garlic, and celery until softened (about 5 minutes).
- 3Add potato and broccoli. Then add broth and milk.
- 4Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
- 5If you prefer a smoother soup, process slightly cooled soup in batches in a food processor.
