- 1Clean and grate enough zucchini to make 3 cups, leave skin on.
- 2Combine flour, cinnamon, baking soda, baking powder and salt. Set aside.
- 3In mixer bowl combine eggs, brown sugar, apple sauce and vanilla extract.
- 4Add flour mixture to wet ingredients and beat well.
- 5Add zucchini and raisins and combine well.
- 6Use baking spray on mini loaf pan and scoop batter into pan.
- 7Bake at 325 °F (165 °C) for 30 minutes.
- 8Cool in pan for 20 minutes. Turn out loaves and allow to cool.
