  1. 1Clean and grate enough zucchini to make 3 cups, leave skin on.
  2. 2Combine flour, cinnamon, baking soda, baking powder and salt. Set aside.
  3. 3In mixer bowl combine eggs, brown sugar, apple sauce and vanilla extract.
  4. 4Add flour mixture to wet ingredients and beat well.
  5. 5Add zucchini and raisins and combine well.
  6. 6Use baking spray on mini loaf pan and scoop batter into pan.
  7. 7Bake at 325 °F (165 °C) for 30 minutes.
  8. 8Cool in pan for 20 minutes. Turn out loaves and allow to cool.
