Veggie Soup

Ingredients
- 1 1/3 tsps chili seasoning mixNutrition
- 1 tbsp extra virgin olive oilNutrition
- 1 1/4 cups diced tomatoes and green chiliesNutrition
- 1 medium onionNutrition
- 2 medium bell peppersNutrition
- 12 oz mushroom pieces and stemsNutrition
- 1 3/4 cups great northern beansNutrition
- 1 3/4 cups whole kernel sweet cornNutrition
- 3 1/2 cups diced tomatoesNutrition
Directions
- 1Dice the onion and bell peppers and fry them in the olive oil in a large pot. Fry them until they're soft.
- 2Then put diced tomatoes, mushrooms, corn, beans (all undrained) and the chili seasoning into the pot with the onion and peppers.
- 3Stir all ingredients until bubbling and hot, then cover and let simmer on low heat for at least 30 minutes.
- 4Serve.
