Ingredients
- 1/4 cup lowfat milkNutrition
- 2 large eggsNutrition
- 1 dash ground pepperNutrition
- 1 tsp vanilla extractNutrition
- 1 tbsp margarineNutrition
- 3/4 cup oat mealNutrition
- 1/2 cup applesauceNutrition
- 1/4 cup packed raisinsNutrition
- 2 cups pumpkin pie mixNutrition
- 1/2 cup chopped walnutsNutrition
- 1 tsp baking powderNutrition
- 1 tsp baking sodaNutrition
- 1 cup whole wheat flourNutrition
Directions
- 1Pre-heat oven to 350 °F (175 °C).
- 2Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet.
- 3Add dry mix to the pumpkin and stir until just blended.
- 4Lightly grease muffin pans with margarine (optional) or use non-stick spray.
- 5Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife).
- 6Let cool 15 minutes and enjoy.
