  1. 1Pre-heat oven to 350 °F (175 °C).
  2. 2Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet.
  3. 3Add dry mix to the pumpkin and stir until just blended.
  4. 4Lightly grease muffin pans with margarine (optional) or use non-stick spray.
  5. 5Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife).
  6. 6Let cool 15 minutes and enjoy.
