Penne Pasta with Beans and Greens

Ingredients
- 1/4 cup parmesan cheeseNutrition
- 1/2 tsp leaves dried oreganoNutrition
- 1/4 tsp pepperNutrition
- 1/4 tsp saltNutrition
- 2 tsps olive oilNutrition
- 15 3/4 oz chicken brothNutrition
- 1/2 cup chopped carrotsNutrition
- 1 clove garlic, mincedNutrition
- 1/2 cup chopped onionsNutrition
- 1 package spinach, thawedNutrition
- 4 oz penne pastaNutrition
- 14 1/2 oz italian style diced tomatoesNutrition
- 16 oz white beansNutrition
Directions
- 1Heat oil in saucepan, add carrots, onion and garlic, cook 5 minutes.
- 2Add oregano, salt, pepper, broth and tomatoes; bring to a boil.
- 3Cover, reduce heat and simmer 10 minutes.
- 4Increase heat to medium-high; add pasta, beans and spinach; cook 14 minutes, or until pasta is done, stirring occasionally.
- 5Sprinkle each serving with parmesan cheese.
