Directions

  1. 1Mix eggplant with salt and let stand for 1 hour. Rinse well and dry.
  2. 2Sauté eggplant in oil in small batches. Mash eggplant with a potato masher.
  3. 3Sauté onions until golden and add to eggplant.
  4. 4Beat eggs with other ingredients. Add to eggplant mixture.
  5. 5Pour into oiled 9" baking pan and bake for 30 minutes at 375 °F (190 °C).
