Ingredients
- 2 large eggsNutrition
- 1 cup dry old fashioned oatsNutrition
- 1 tbsp avocado vegetable oilNutrition
- 1/4 cup whole milkNutrition
- 2 tsps pumpkin pie spiceNutrition
- 1/2 cup 100% pure pumpkinNutrition
- 1/4 cup whole wheat flourNutrition
- 1/4 cup unpacked brown sugarNutrition
- 3 tbsps butterNutrition
- 1 dash saltNutrition
- 1/2 tsp cinnamonNutrition
- 1/2 tsp baking sodaNutrition
- 1 tsp vanilla extractNutrition
Directions
- 1Preheat oven to 350°F.
- 2Mix flour, brown sugar, cinnamon, salt, and butter. Set aside for topping.
- 3Mix remaining ingredients in blender until smooth.
- 4Pour batter evenly in muffin cups. Sprinkle topping on top of each cup.
- 5Bake for 15 min or until toothpick comes out clean.
