Pumpkin Chili
Pumpkin is the surprise ingredient and really adds a great twist to this comfort food.

Ingredients
- 1 tbsp sour cream, reduced fatNutrition
- 1 cup shredded cheddar cheese, reduced fatNutrition
- 1 tbsp chili powderNutrition
- 1 tsp black pepperNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 1 lb ground turkeyNutrition
- 1 clove garlic, mincedNutrition
- 1 cup chopped onionNutrition
- 1/2 cup chopped green pepperNutrition
- 2 cups pumpkin pureeNutrition
- 1/2 large yellow pepperNutrition
- 2 cups great northern beansNutrition
- 14 1/2 oz diced tomatoesNutrition
Directions
- 1Heat the oil in a large skillet over medium heat, and sauté the onion, green bell pepper, yellow bell pepper, and garlic until tender.
- 2Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt.
- 3Add great northern beans, drained to mixture. Reduce heat to low, cover, and simmer 20 minutes.
- 4Serve topped with cheddar cheese and sour cream.
