Garlic and Ginger Beef Curry

Ingredients
- 2 1/2 tsps ground corianderNutrition
- 1 tsp ground cuminNutrition
- 1/4 tsp dried red pepper flakesNutrition
- 0.12 tsp turmericNutrition
- 1/2 tsp saltNutrition
- 3 tbsps olive oilNutrition
- 3 tbsps chopped cilantroNutrition
- 3 cloves garlic, mincedNutrition
- 3 tsps ginger, mincedNutrition
- 1 medium onion, cut in thin slicesNutrition
- 1 oz waterNutrition
- 24 oz sirloin steak, cut in cubesNutrition
Directions
- 1In a large frying pan, heat the oil over a moderate heat.
- 2Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
- 3Add garlic and ginger and continue to cook for 1 minute, stirring.
- 4Meanwhile in a small bowl, combine the coriander, cumin, red pepper flakes, turmeric, salt and water into a paste. Add the paste to the onion and cook, stirring for 1 minute.
- 5Add the meat to the pan and cook, stirring for 3 minutes.
- 6Raise the heat to moderately high and cook to your taste, stirring about 2 minutes longer for medium rare.
- 7Stir in cilantro and serve.
- 8Note: a long-simmering curry becomes a quick one when you substitute a tender cut of beef (like sirloin or fillet) and stir-fry it till medium-rare.
