Mexican Pancakes
A tasty pancake like patty with a nice Mexican flavor.

Ingredients
- 8 oz sliced black olivesNutrition
- 1/2 cup sliced mushroomsNutrition
- 1/2 large finely chopped onionNutrition
- 0.12 cup green chili peppersNutrition
- 3 tsps baking powderNutrition
- 1/4 cup sweetenerNutrition
- 1/2 cup frozen cornNutrition
- 1/2 cup cornmealNutrition
- 1 1/2 cups rolled oatsNutrition
- 1/2 cup whole wheat flourNutrition
- 1/2 cup white flourNutrition
- 1 cup fat free milkNutrition
Directions
- 1Mix all ingredients together. Eyeball the amount of ff milk to add (can use water as well) to come up with a nice thick pancake like batter.
- 2Heat electric skillet (or cast iron skillet) to a nice hot temperature. Pour a bit of olive oil in skillet to keep pancakes from sticking. Not much is needed.
- 3Pour batter and let 'bake' about 10 minutes per side, keeping lid on skillet.
- 4Top with either shredded cheese or sour cream.
- 5Homemade chili would make a nice addition as well.
- 6Note: I substituted xylitol (which has less calories) for the sweetener.
