Feta Pesto Chicken

  1. 1Pre-heat oven to 350 °F (175 °C) and tenderize the chicken breasts between two sheets of stretch wrap then season with dash of salt.
  2. 2Take basil leaves, olive oil, pine nuts and parmesan and blend to preference in a food processor, then gently mix in crumbled feta cheese (fat free if available).
  3. 3Place half of pesto feta mixture in the middle of each chicken breast and wrap the chicken around filling.
  4. 4Place the wrapped chicken seam side down on to a lightly oiled pan, drizzle with a touch of olive oil then lightly salt and pepper.
  5. 5Place in oven for 35-40 minutes uncovered.
  6. 6then turn broiler on high and broil for an additional 4-5 minutes.
  7. 7Drizzle drippings over plated chicken and serve.
