- 1In a large bowl, mix dry ingredients.
- 2In a small bowl mix the zest, egg, butter and soy milk together until combined.
- 3Mix with dry ingredients and stir just until combined, trying not to over stir.
- 4Bake at 350 °F (175 °C) for 20 minutes.
- 5Let cool in the pan for 2 minutes before taking them out.
- 6Note: sugar can be used instead of sweetener.
