  1. 1Pre-heat oven to 350 °F (175 °C).
  2. 2Combine flour, butter, cottage cheese, cheddar cheese, and hot sauce in a food processor or blender.
  3. 3Add spinach and pulse briefly. You should be able to see small chunks of spinach in mixture.
  4. 4Line muffin tin with ham slices (1 per muffin cup).
  5. 5Pour 1/3 cup egg mixture into each muffin cup.
  6. 6Bake for 20 to 25 minutes or until toothpick comes out clean.
