Red Bean and Pepper Chili

Ingredients
- 1 dash black pepperNutrition
- 1 dash saltNutrition
- 2 sprays olive oilNutrition
- 1/3 tbsp sweet chili sauceNutrition
- 1 cup sweet cornNutrition
- 1/2 cup vegetable stockNutrition
- 1 clove garlic, crushedNutrition
- 1 medium onion, thinly slicedNutrition
- 2/3 cup tomatoes, choppedNutrition
- 1 medium red pepper, slicedNutrition
- 1 cup red kidney beans, drainedNutrition
- 1 tsp sugarNutrition
- 1 tbsp tomato pureeNutrition
Directions
- 1Spray a non-stick saucepan lightly with oil and when hot, tip in the onion, garlic and pepper.
- 2Cover and cook over medium heat for about 5 minutes, stirring occasionally, until softened and just beginning to turn golden brown.
- 3Stir in the beans, sweetcorn (no need to drain it), tomatoes, stock, chili sauce, tomato puree and sugar.
- 4Bring just to the boil, cover and simmer gently for about 5 minutes, stirring occasionally.
- 5Serve with bread or rice.
