  1. 1Preheat oven to 350 °F (175 °C).
  2. 2Peel and slice sweet potatoes into thin rounds. Slice red pepper. Peel and thinly slice onion.
  3. 3Melt butter in a 12" non-stick skillet. Add onions, peppers, sausage, sweet potatoes and chives. Cook down for 10 minutes.
  4. 4Add eggs, cheese and salt/pepper (if desired). Cook on stove-top for an additional 5 minutes.
  5. 5Finish it in the oven for another 20 minutes until a knife comes out clean.
