Ingredients
- 12 oz evaporated milk, nonfatNutrition
- 1 tsp cuminNutrition
- 1 tbsp olive oilNutrition
- 3/4 cup chopped onionsNutrition
- 8 oz chicken breast meat, choppedNutrition
- 14 oz reduced sodium chicken brothNutrition
- 3/4 cup chopped green peppersNutrition
- 3/4 cup chopped red peppersNutrition
- 2 chipotle peppers in adobo sauceNutrition
- 4 fl oz waterNutrition
- 3 tbsps cornstarchNutrition
Directions
- 1Heat oil in a large saucepan over medium heat.
- 2Add sweet pepper, chopped onion, and cumin; cook for 3 minutes, stirring occasionally.
- 3Carefully add chicken broth, water, and chipotle peppers.
- 4Bring to boiling; reduce heat. Simmer, covered, about 8 minutes. Stir in chicken.
- 5Gradually stir about 1/3 cup of the milk into cornstarch in a small bowl; stir into broth mixture in saucepan.
- 6Add the remaining milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
- 7Garnish with sliced green onions, if desired.
