Bean & Sausage Soup

Ingredients
- 14 oz lean smoked turkey sausageNutrition
- 2 1/2 cups mixed dried beansNutrition
- 1 tbsp chipotle chili powderNutrition
- 1 tbsp black pepperNutrition
- 1 tbsp leaves thymeNutrition
- 8 cups vegetable brothNutrition
- 2 medium carrots, choppedNutrition
- 1 cup chopped onionsNutrition
- 3 cups waterNutrition
- 15 oz canned diced tomatoesNutrition
Directions
- 1Combine all ingredients in slow cooker.
- 2Cook on high 3 hours, turn down to low.
- 3Cook 6-8 hours or until beans are done.
- 4Serve with a dash (or 3!) of hot sauce and enjoy.
- 5Note: this keeps and freezes beautifully and is a great go-to lunch to take to work and/or perfect to cook in advance and pull out on nights when you don't feel like making dinner.
