Shrimp and Edamame Rotini
Rotini pasta with shrimp, tomatoes, edamame and a garlic parmesan sauce.

Ingredients
- 1/3 cup parmesan cheese, gratedNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 4 cloves garlic, mincedNutrition
- 3 tbsps fresh parsley, choppedNutrition
- 1 1/2 cups shelled edamameNutrition
- 8 oz dry whole wheat rotiniNutrition
- 15 oz diced tomatoesNutrition
- 1 lb large shrimp, shelled and deveinedNutrition
Directions
- 1Cook the rotini in a large saucepan according to the package directions. Add the edamame for the last 5 minutes of cooking.
- 2When the pasta and edamame are done, drain and return to the saucepan.
- 3While the pasta is cooking, heat the olive oil in a large non-stick skillet over medium heat.
- 4Add the garlic and cook until golden, 30 seconds to 1 minute.
- 5Add the shrimp and cook over high heat for 1 minute per side; add the diced tomatoes and bring to a boil.
- 6Lower the heat and simmer for an additional 2 minutes.
- 7Combine the shrimp mixture with the cooked pasta and edamame. Toss with the parmesan cheese and parsley. Season with salt and pepper.
