Zesty Chicken and Vegetables
Oven baked chicken with new potatoes and vegetables in a zesty olive oil sauce.

- 1Spray oil in large pyrex oblong dish. Place chicken in the middle. Slice potatoes and lay on each side of the chicken.
- 2Place green beans on the side of the potatoes, or on top.
- 3Mix the package of zesty Italian dressing with olive oil and drizzle over all of the mixture. Cover with foil.
- 4Bake at 350 °F (175 °C) for about 1.5 hours or at 300 °F (150 °C) for 2 hours.
- 5Note: this is a slightly modified recipe from a local cook book with a mix of recipes from some of the best cooks.
