Chicken with Olives and Lemon

Ingredients
- 1 tsp leaves mixed herbsNutrition
- 2 tbsps olive oilNutrition
- 4 breasts, bone and skin removed chicken breastsNutrition
- 1 lemon, slicedNutrition
- 12 small black olives, choppedNutrition
- 1 cup chicken stockNutrition
- 1/3 tbsp fresh parsley, choppedNutrition
- 1/3 tbsp honeyNutrition
- 18 oz new potatoes, boiledNutrition
- 1 oz vegetable fat spreadNutrition
Directions
- 1Heat the oil in a saucepan and fry the chicken until lightly browned.
- 2Add the stock, mixed herbs and lemon. Cover and simmer for 20 minutes.
- 3Remove chicken and whisk in parsley, spread and honey. Boil and reduce until slightly thickened.
- 4Replace chicken and reheat.
- 5Serve with the boiled new potatoes and your choice of mixed vegetables.
