Microwave Meatloaf
Tasty meatloaf that works for Phase 2 of the South Beach diet.

Ingredients
- 2 cups eggsNutrition
- 1/4 tbsp black pepperNutrition
- 2 tsps or 1 packet mustardNutrition
- 1 tbsp worcestershire sauceNutrition
- 1 cup oats cerealNutrition
- 1/2 cup chopped onionsNutrition
- 1/2 cup chopped bell pepperNutrition
- 1 1/2 lbs extra lean ground beefNutrition
- 5 oz fat free evaporated milkNutrition
- 8 oz tomato sauceNutrition
Directions
- 1Mix all ingredients until thoroughly blended.
- 2Shape into large ball and place in 9" pie plate.
- 3Make a hole in center completely through to plate.
- 4Place in microwave and cook to internal temperature of 70 °F (165 °C).
- 5Remove from microwave and drain any grease.
- 6Allow to stand about 10 minutes before slicing and serving.
