Ingredients
- 1 tbsp cuminNutrition
- 4 tbsps taco seasoningNutrition
- 2 tbsps extra virgin olive oilNutrition
- 2 breasts, bone and skin removed chicken breastNutrition
- 3 cups chicken brothNutrition
- 1 1/2 cups fresh cilantroNutrition
- 4 tsps garlicNutrition
- 1 medium onionNutrition
- 1.12 cups stewed tomatoesNutrition
- 1/4 cup green chilies, choppedNutrition
- 4 cups waterNutrition
- 1 cup black beansNutrition
- 1 cup cannellini beansNutrition
Directions
- 1Grill the chicken breast and then chop it into small bite-size pieces.
- 2Heat the extra virgin olive oil in a large stock pot and then add onion and garlic, stirring and cooking for about 2 minutes.
- 3Add the tomatoes, green chilies, cumin, taco seasoning, and chicken, stirring and cooking for about 2 minutes.
- 4Add the beans, chicken broth, and water. Season to taste.
- 5Bring to a boil, turn to low heat, and simmer for 20 minutes to 1 hour. Add the cilantro about 5 minutes before serving.
