Chicken, Tomatoes and Rice Gumbo

Directions
- 1Brown chicken (or turkey) in non-stick fry pan.
- 2Add chopped onions and garlic minced or pressed.
- 3When chicken is no longer pink, drain and add canned tomatoes.
- 4Add cream of chicken soup.
- 5Add spices.
- 6Add chicken stock and rice.
- 7Bring to a boil and then simmer until rice is cooked (about 20 minutes). Add more chicken stock if rice is not softening.
- 8Serve with a dollop of fat-free sour cream or a sprinkle of parmesan cheese. Enjoy!
