Turkey Lasagna

Using low-fat mozzarella and ricotta cheese, this tastes wonderful.

Directions

  1. 1Cook lasagna noodles as directed on package.
  2. 2Brown turkey in olive oil with onions and garlic.
  3. 3Add entire can of diced tomatoes, juice and all. (You can use the ones that come with basil and oregano). Let it simmer until most of the liquid evaporates.
  4. 4Mix 1 cup of the mozzarella into the ricotta.
  5. 5Put a few spoonfuls of the meat mixture in the bottom of a baking dish, then put noodles on top of it.
  6. 6Top those with half of the cheese mixture. Repeat, and top with remaining cup of mozzarella cheese.
  7. 7Cover with foil and bake at 350° F (175° C) for 30-35 minutes. Remove foil for last 5 minutes or until bubbly and lightly browned.
