Vinegar and Salt Sweet Potato Wedges

  1. 1Preheat oven to 400 °F (200 °C).
  2. 2Peel sweet potatoes and cut length wise into 8 wedges.
  3. 3In a large saucepan over high heat, heat the vinegar, sugar, butter, salt, red pepper flakes and water to a boil.
  4. 4Remove the pan from the heat, and add the potato wedges. Toss to coat.
  5. 5Spread the potato wedges evenly on a foil lined baking sheet.
  6. 6Place in oven and roast, turning wedges occasionally for 45 minutes or until the potatoes are very tender and the glaze thickens.
  7. 7Remove from oven and sprinkle with additional salt if desired.
