- 1Preheat oven to 400 °F (200 °C).
- 2Peel sweet potatoes and cut length wise into 8 wedges.
- 3In a large saucepan over high heat, heat the vinegar, sugar, butter, salt, red pepper flakes and water to a boil.
- 4Remove the pan from the heat, and add the potato wedges. Toss to coat.
- 5Spread the potato wedges evenly on a foil lined baking sheet.
- 6Place in oven and roast, turning wedges occasionally for 45 minutes or until the potatoes are very tender and the glaze thickens.
- 7Remove from oven and sprinkle with additional salt if desired.
