Spicy Bean Burgers
Spicy black eye bean burgers with yogurt mint dressing.

Ingredients
- 1 container yogurt, low fatNutrition
- 1 medium eggNutrition
- 1 tsp chili powderNutrition
- 1 tsp cumin seedsNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 tbsp mint sauceNutrition
- 2 cloves garlic, finely choppedNutrition
- 1 medium onion, finely choppedNutrition
- 1 chili, finely choppedNutrition
- 1 cup black eye beans, drained (1 can)Nutrition
- 50 g bread crumbsNutrition
Directions
- 1Fry the onions, garlic, red chili (flakes or chopped chili) and cumin seeds in oil until the onion softens, Remove from heat.
- 2Drain the beans and mash in a blender, or by hand. Add the egg, breadcrumbs, chili powder and the onion mix, and mix well and season.
- 3Shape into 4 small burgers. Ideally leave in the fridge for 30 minutes.
- 4When ready to serve, fry off burgers in pan of oil on both sides until brown.
- 5Serve with a mint and yogurt dressing (mix up some mint sauce with some yogurt) and also a large helping of salad.
