- 1Simmer the chicken with water on the stove for 20 minutes or until chicken comes easily off the bone.
- 2Let the chicken cool and debone. Cut into small bite size pieces. (You can save broth for other recipes).
- 3Mix cooled chopped chicken with all the other ingredients in a bowl.
- 4Refrigerate.
- 5To serve, scoop a 1/2 cup on a bed of lettuce. Slivered almonds make a nice touch as a garnish if desired.
- 6Note: if you want to lower the carb count you can omit the mandarin oranges and grapes, however the taste isn't quite the same without them.
