  2. 2Coat large baking sheet with cooking spray.
  3. 3Arrange potatoes on prepared sheet and season to taste with salt and pepper.
  4. 4Bake 20 minutes, flip fries, then bake another 20 minutes until golden and fork tender.
  5. 5Cluster potatoes together on cooking sheet and sprinkle with cheese, bake until cheese melts, about 5 minutes.
