  1. 1Cut up the onion and fry in the oil until brown.
  2. 2Add the water and stock cubes. Add the potatoes and carrots and mix.
  3. 3Bring to the boil and simmer for 30 minutes. When vegetables are soft liquidize.
  4. 4Serve with sprinkle of mixed herbs on top.
