Turkey Meatball Noodle Soup

Ingredients
- 1 tbsp vegetable oilNutrition
- 1/4 cup bread crumbsNutrition
- 3 1/2 cups cannellini beansNutrition
- 20 oz 99% fat free ground turkey breastNutrition
- 4 cups whole wheat rotiniNutrition
- 1 large eggNutrition
- 2 tbsps grated parmesan cheeseNutrition
- 2 tbsps onion powderNutrition
- 4 tsps leaves oregano, mincedNutrition
- 6 tsps thyme, mincedNutrition
- 8 cups chicken stockNutrition
- 1 small carrot, choppedNutrition
- 1 stalk medium celery, choppedNutrition
- 1 small yellow onion, choppedNutrition
- 1 package frozen spinachNutrition
Directions
- 1In a bowl, mix chicken, egg, bread crumbs, parmesan cheese, onion powder, 2 teaspoons oregano, and 3 teaspoons thyme. Season with salt and pepper.
- 2Form into small meatballs.
- 3Sauté in vegetable oil over medium heat in a large soup pot. Transfer to a plate.
- 4Sauté onion, carrot, celery, oregano, and thyme over medium heat, about 3 minutes.
- 5Add minced garlic and sauté until fragrant. Season with salt and pepper.
- 6Add chicken stock and meatballs. Bring to a simmer.
- 7Add cannellini beans, spinach, and pasta.
- 8Cook pasta until al dente. Season with salt and pepper to taste.
