  1. 1Whisk the egg whites until firm and form stiff peaks.
  2. 2In a second bowl mix the egg yolks, almond flour, stevia and baking powder.
  3. 3Add the melted butter slowly, mixing to ensure it is a smooth consistency.
  4. 4Add the heavy cream and vanilla, mix well.
  5. 5Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and fluffiness as possible.
  6. 6Place enough of the waffle mixture into the warm waffle maker to make one waffle. Cook until golden.
  7. 7Repeat until all the mixture has been used.
